Bacon Stuffed Mushrooms with Artichoke Hearts

Ingredients

• 40 mushrooms (such as baby bella, crimini, or white, about 1 ½” – 2” wide) cleaned
• 6 Tblespoons butter, divided
• 2 medium onions, finely diced
• 2 teaspoons minced garlic
• 1 teaspoon Kosher salt
• ½ teaspoon freshly ground black pepper
• ½ cup dry white wine or stock
• 1 Tablespoon roughly chopped fresh thyme leaves
• 4 slices bacon, cooked crisp and finely chopped
• 2/3 cup finely chopped rye bread crumbs
• ½ cup grated mozzeralla
• 4 whole marinated artichoke hearts (or 16 quartered), finely chopped
