Summer Peach Cake - Christina Cooks

Ingredients

• 1/4 cup extra virgin lemon olive oil
• 1/2 cup coconut sugar
• 1 teaspoon pure vanilla extract
• 1/2 teaspoon pure lemon extract
• 1/4 teaspoon sea salt
• 2 cups sprouted whole wheat flour (or whole wheat pastry flour)
• 1/2 cup semolina flour
• 1 1/2 teaspoons baking powder
• 1/2 teaspoon baking soda
• 1/2 cup chopped walnut pieces
• 2 ripe peaches, halved, stones removed, sliced into thin slices
