Ingredients

• russet potatoes: 1 lb (peeled and diced)
• ground nutmeg: 1 dash
• salted butter: 4 tsp
• eggs: 1 (yolk)
• vegetable oil: 1 cup
• grated parmesan cheese: 1/3 cup (freshly grated)
• frozen chopped spinach: 1/3 cup (thawed and drained)
• all-purpose flour (unsifted): 1/2 cup
• eggs: 3 (beaten)
• peanut oil: 1 Tbl
• bread crumbs: 1 1/3 cups
