• 15 lbs beef rib roast (trimmed and tied)
• 2 tsp salt
• 2 tsp ground black pepper
• 3 tsp thyme leaves (dried)
• 3 heads garlic (unpeeled)
• 3 medium shallot (peeled and minced)
• 1 cup red wine (dry)
• 2 tbsp balsamic vinegar
• 4 cups reduced-sodium beef broth
• 2 tbsp all-purpose flour
• 2 tbsp butter (softened)
• 1 bay leaves
