- 3.2 kg deboned gammon
- 1 celery stalk
- coriander seeds
- 1 tsp peppercorns
- 2 bay leaves
- cloves (purely decorative and presentation)
- ½ cup muscovado sugar ( or any soft brown sugar)
- ¾ to 1 cup honey
- 1 ½ tbsps Dijon mustard
- 2 tbsps. unsalted butter
