- 200g (melted & cooled) Kerrygold Pure Irish Salted Butter
- 250g ground almonds
- 1tsp baking soda
- 250g sugar
- 1tsp cinnamon
- 1 pinch of salt
- 1 lemon, zest and juice
- 300g carrots, grated
- 4 eggs (M)
- For the icing
- 100g icing sugar
- 2-3 tablespoons of lemon juice or water
- 75g pistachios, chopped
- 12 marzipan carrots for decoration
