- 1 medium red onion, finely chopped (2/3 cup)
- 1 yellow bell pepper, diced (1 cup)
- 1/2 cup chopped fresh parsley
- 2 tablespoons chopped fresh mint
- 1/4 cup fresh lime juice
- 1/4 cup apple cider vinegar
- 1 jalapeño pepper, seeded and minced (or more to taste)
- 1 teaspoon light agave nectar
- 1 teaspoon sea salt, or to taste
- 1 teaspoon freshly ground black pepper, or to taste
- 2 cups peeled, diced jicama
