Spinach Sensation: Bachali Kura Delight!

Ingredients

• Salt to taste
• 2 garlic cloves, minced
• Fresh lemon juice for garnish
• 1 tsp cumin seeds
• 1 small onion, finely chopped
• 2 tbsp oil
• 1 tsp mustard seeds
• 1/2 tsp turmeric powder
• 1inch piece of ginger, grated
• 1/2 cup grated coconut (optional)
• 23 green chilies, slit lengthwise
• 1 tsp red chili powder (adjust to taste)
• 2 bunches of Bachali Kura (Malabar spinach)
