Recipe: Esterhazy Roast Beef

Ingredients

• 4 slices roast beef or beef loin, each approx. 180 g / each approx. 6.3 oz
• 6 shallots or 2 onions
• 1 small carrot
• 0.5 root parsley
• 1 small turnip
• 1 small piece celery heart
• 1 tsp chopped capers
• 50 g bacon cubes / 1.7 oz
• 4 tbsp soured cream
• 1 tbsp flour for the sauce
• 300 ml beef stock or water / 1½ cups
• grated lemon zeste
• flour for coating
• salt
• pepper
• 2 tbsp butter (or clarified butter, or oil)
• chopped parsley to garnish
