Ingredients

• 1 beef Coulotte Roast (about 3 pounds)
• 1/2 cup Grill Mates® Brown Sugar Bourbon Seasoning
• 2 pounds sweet potatoes, peeled and cut into 1-1/2 to 2-inch pieces
• 2 teaspons kosher salt
• 1 teaspoon freshly ground black pepper
• 2 tablespoons vegetable oil
• 1/2 cup Cattlemen's® Kentucky Bourbon BBQ Sauce
• 6 cups fresh baby spinach leaves, gently wilted
