Sausage Traybake Recipe | Mediterranean Style | Richmond

Ingredients

• 1x pack Richmond Thick Signature Pork Sausages
• 300g small potatoes, halved and parboiled
• 1x red onion, cut into wedges
• 2x peppers (red or orange), deseeded and roughly chopped into chunks
• 2x medium courgettes, sliced
• 200g cherry tomatoes, left whole
• 3x cloves of garlic – thinly sliced or left whole with the skin on
• 2 tbsp extra virgin olive oil
• Salt and pepper to season
• 20-30g or a small bunch of parsley, leaves picked, roughly chopped
