• 2 red onions peeled and quartered
• 2 corn cobs cut into 4-6 pieces
• 1 mango stoned and chopped
• 2 large sweet potatoes cut into wedges
• 8-12 pork sausages
• 2 tsp ground cumin
• 2 tsp paprika
• 2 tsp fennel seeds
• 2 tsp dried oregano
• 2 tbsp barbecue sauce
• 2 tbsp olive oil (or vegetable or rapeseed oil)
• coriander chopped
• chillies chopped
