- 4x 125g (4 1/2 oz) snapper fillets, scaled and pin-boned
- 1 corn on the cob
- 1 tablespoon olive oil
- 1 tablespoon sea salt
- 2 tablespoons garlic salt
- 3 tablespoons onion salt
- 4 tablespoons paprika
- 1 tablespoon freshly ground black pepper
- 2 teaspoons cayenne pepper
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 250g (1 cup plus 2 tablespoons) chilled unsalted butter, diced
- 1 large shallot or small red onion, diced
- 1 garlic clove, chopped
- 4 tablespoons, white wine
- 1 lime, zested and juiced
