- 2 carrots (chopped into small cubes)
- 1.75 Japanese pumpkin (Kabocha squash or Buttercup squash) OR sweet potato (peeled & chopped into small cubes)
- 2 potatoes (peeled & chopped into small cubes)
- 4 low FODMAP beef stock or chicken stock
- 1 boiling water
- 1 dried oregano
- 0.5 dried thyme
- 1 salt & pepper
- 1.5 green beans (chopped into bite-sized pieces)
- 3 fresh parsley (optional, for garnish)
