- 1 medium onion – diced.
- 25g butter.
- 60g bacon / pancetta bits or lardoons.
- 115g fennel (approx. half a bulb) – diced.
- 450g chicken breasts – skinned.
- 125ml white wine.
- Few sprigs fresh thyme.
- 125ml crème fraiche.
