Mushroom Risotto - Pankobunny

Ingredients

• 1 tbsp butter
• ¼ small onion (minced)
• 1 ½ cups oyster mushrooms (cut into half-inch pieces)
• scant ¼ cup white wine (I used Pinot Grigio)
• salt & pepper
• 1 rice cooker cup Arborio rice
• 2 cups approx. chicken stock
• 2 tbsp parmesan cheese + extra for topping
• fresh parsley
