  • 6 slice thick-cut bacon, chopped into bite-sized pieces
  • 2 cup dry red wine (Burgundy or Pinot Noir work beautifully)
  • 1 cup chicken broth, preferably low-sodium
  • 1 lb pearl onions, peeled (frozen are fine, thawed first)
  • 8 oz mushrooms, halved or quartered if large
  • 3 clove garlic cloves, minced fine
  • 2 tbsp tomato paste
  • 2 sprig fresh thyme sprigs
