Alper Sarikaya — Spicy Soba Noodles with Sesame Peanut Sauce

Ingredients

• 4 tbsp pb2 powder , plus 2 tbsp water
• 1/2 C tamari
• 2 tbsp maple syrup
• 1 tbsp lime zest
• 2 tbsp lime juice
• 2 cloves garlic , minced
• 1 tbsp ginger , fresh
• 2 tbsp sriracha
• 1 C edamame , shelled
• 2 carrots , shredded
• 1 shallot , thinly sliced
• 1 bell peppers , red, cut into strips
• 1/2 small head red cabbage , chopped
• 1 bunch green onions , chopped
• 1/2 C peanuts , chopped
• 1 tbsp sesame seeds , toasted
• 5 bunches soba noodles
• cilantro , fresh, chopped, for serving
