Spicy Tomato Soup - Pinch Of Nom

Ingredients

• 1 large white onion (peeled and sliced)
• 2 celery sticks (chopped)
• 4 garlic cloves (peeled and crushed)
• 2 400g tins of chopped tomatoes
• 250 ml vegetable stock (made up of 250ml boiling water and 1 stock cube)
• 2 tbsp tomato puree
• 2 tbsp Henderson's Relish (or Worcestershire sauce)
• 1 tsp paprika
• 1 tsp lemon juice
• 1 tsp Tabasco sauce (add more or less to taste)
• low calorie cooking spray
• salt and pepper to taste
