Chicken Paprika (Hungarian Chicken Paprikash)

Ingredients

• 2 chicken breasts; cut to chunky strips (close to "nugget size")
• 1 tbsp extra virgin olive oil
• ¼ black pepper; to taste
• ¾ cup sour cream
• 2½ tsp paprika
• 1 tbsp butter
• 1 large, 2 medium red bell peppers, thinly sliced
• ¼ tsp salt; to taste
• ½ onion, thinly sliced
