Ingredients

• 1 bunch kale or other greens (turnip, collard), stemmed and washed
• 1 Tbs olive oil
• 1 medium onion, chopped
• 1-2 cloves of garlic, minced
• ½ pound mushrooms, sliced
• 1 tsp thyme
• salt and pepper
• ½ pound stale whole grain bread, sliced and cubed
• 2 oz Gruyere cheese, shredded
• 1 ounce Parmesan, grated
• 4 eggs, beaten
• 2 cups milk
