Spicy Bacon Jam – Cuso Cuts
Have you ever had spicy bacon jam? If not, you are in for a treat. The flavor profile is a little tricky to explain, but what I can tell you is this stuff makes a great indulgence. I’ve used it on...
Ingredients
- 1 lb smoked, chopped bacon
- 1 large red or yellow onion, finely diced
- 3 cloves garlic, minced
- 1/2 c brown sugar **
- 1 tbsp Cuso’s Maple Bourbon Brown Sugar Seasoning
- 1/4 cup sherry vinegar
- 1/4 c Real maple syrup
- -1/4 c freshly brewed coffee
- 1-2 chipotle pepper minced
- Salt and black pepper to taste
- Cuso Hot Honey Seasoning
- Smoky Garlic Buffalo Seasoning
- Grass Seasoning
- Chop the bacon.
- Put it into a cast iron skillet over medium heat.
- When the fat renders out, remove the bacon and transfer it to a few paper towels to drip.
- Cut the garlic and onions, then add them to the bacon fat
- Saute until the onion is translucent.
- Return the bacon to the skillet.
- Add the remaining ingredients.
- Stir until integrated, then simmer for a half hour (you want a jam-like consistency. If it needs more time, just keep an eye on it so it doesn’t burn).
- At this point, you can blend it in a food processor, creating the texture you prefer, or serve it as is.
- Once the jam cools, use a glass jar with a good seal and store the mix within. It remains good in the refrigerator for about 2 weeks.
