Ingredients

• 1 tbsp olive oil
• 1 onion, chopped
• 1 tsp smoked paprika
• 1 tsp dried thyme
• 300g paella or risotto rice
• 3 tbsp dry white wine
• 400g tin chopped tomatoes
• 900ml fish, chicken or veg stock
• x 2 packs of Real Seafood Co Seafood Selection
• 1 lemon
• A handful of flat-leaf parsley, roughly chopped
