Elote & Green Corn Salad

Ingredients

• 4 ears sweet corn, shucked
• ¼ cup Mexican crema
• ¼ cup mayonnaise
• Tajin or Cornhub Elote seasoning (as desired)
• 1 tablespoon lime juice
• ¼ cup Cotija cheese, crumbled
• 10 to 15 cherry tomatoes, cut in half
• 1 cup of feta cheese, crumbled
• 1 cup cucumber, chopped
• 2 teaspoons of your favorite Greek seasoning or Cornhub Greek seasoning
• 2 teaspoons of balsamic vinegar
