Big Sausage Rolls - River Cottage

Ingredients

• 1kg finely minced pork, ideally a mixture of shoulder and belly
• A small bunch of chives, finely chopped
• 1 tsp chopped thyme leaves
• 1 tbsp chopped sage leaves
• 1 tsp garam masala
• A small pinch of cayenne pepper
• 100g fresh white breadcrumbs
• 1 tsp salt
• Freshly ground black pepper
• 175g unsalted butter, chilled and cut into small cubes
• 350g plain flour
• A good pinch of salt
• About 3–4 tbsp iced water, to mix
• Egg wash (beaten egg mixed with a splash of milk), to glaze
• Fennel seeds and flaky sea salt, to finish
