- <sup>1</sup>⁄<sub>2</sub> cup granulated sugar
- <sup>1</sup>⁄<sub>4</sub> cup corn starch
- 1 tbsp. fresh lemon juice
- 1 tbsp. bourbon
- 2 tsp. vanilla extract
- 1 tsp. kosher salt
- <sup>1</sup>⁄<sub>2</sub> tsp. ground cinnamon
- <sup>1</sup>⁄<sub>4</sub> tsp. freshly grated nutmeg
- 4 lb. peeled and pitted peaches, thawed if frozen, chopped or cut into thin wedges
