• kosher salt and freshly ground black pepper
• 4 pounds beef short ribs (cut into 2 inch pieces)
• 3 tablespoons oil
• 1 1/2 quarts chicken stock
• 1/2 teaspoon oregano (preferably Mexican)
• 2 bay leaves
• 2 cups cabbage (finely shredded, for garnish)
• 2 tablespoons lime juice (freshly squeezed)
• 4 ounces cotija ( or feta cheese, grated for garnish)
• 12 corn tortillas (small)
