Zucchini balls - Hellenic Fine Oils

Ingredients

• 1 kg zucchini, cut into small cubes
• 1 large onion, cut into dice
• ½ cup of tea spear mint leaves, finely chopped
• 40ml Aigli olive oil
• 1 tbsp paprika flakes
• 1 tbsp oregano dry, grated
• 150g self-rising flour
• 2 eggs, separate the yolks from the whites
• ½ teacup kasseri (yellow) cheese, grated
• Salt, pepper
