Ingredients

• <strong>Shortcrust pastry (homemade or store-bought) (Yields 2 crusts of approximately 9 inches (23 cm) each) </strong>
• 2 ¼ cups flour 560 ml
• 1 pinch of salt
• 3/4 cup butter, cold and diced 180 ml
• 1/3 cup ice water 80 ml
• <strong>Filling (for one crust)</strong>
• 1/2 cup brown sugar 125 ml
• 1/4 cup flour 60 ml
• 1 ½ cups 35% heavy cream or 15% cooking cream 375 ml
• 1/2 cup maple syrup 125 ml
• 2 tsp. vanilla extract 10 ml
• Fleur de sel (optional)
• Maple sugar flakes (optional)
