- Warm water produces a thicker, more consistent gel than cold water. If the mixture is not thickening properly, water temperature is usually the reason.
- Flax eggs do not whip or aerate like chicken eggs. For recipes requiring whipped egg whites, such as meringue, aquafaba (the liquid from canned chickpeas) is the appropriate substitute instead.
- Grinding whole flax seeds fresh produces better results than pre-ground meal, which goes rancid faster and may have lost some of its binding quality before you use it.
- Measure 1 tablespoon of ground flaxseed into a small bowl.
- Add 2.5 tablespoons of warm water.
- Whisk together until fully combined.
- Let sit for 5 to 10 minutes without disturbing until the mixture thickens into a gel-like consistency.

- Always use warm water, not cold. Cold water slows the gelling process and may not produce the right consistency within the resting time.
- Grind whole flax seeds fresh in a coffee grinder or food processor for the best texture and longest shelf life. Pre-ground flaxseed meal oxidizes faster and may be partially rancid before you open it.

- Both golden and brown flax seeds work equally well. Choose golden for lighter-colored baked goods where the brown color would show.
