Curried Lentils and Spinach - Circulon Cookware

Ingredients

• 2 teaspoons of canola or other natural oil
• 1 medium of onion diced
• 2 cloves of garlic minced
• 1 teaspoon of grated ginger root or 1/2 teaspoon powdered ginger
• 2 teaspoons of curry powder
• 1/2 teaspoon of cumin seeds
• pinch of cayenne pepper if desired
• 1 1/4 cups of lentils
• 2 cups of vegetable broth
• 1 10-ounce package of frozen spinach
• 1 tablespoon of lemon juice
• salt and pepper to taste
• cilantro or mint for garnish
