Ingredients

  • 900 g (2 lb) mashed yuca or cassava*
  • 75 g (3 oz) butter, softened
  • 75 ml (3 fl oz) whole milk, warmed
  • ½ tsp Sea Salt
  • ¼ tsp Ground White Pepper
  • Bahian Seasoning (Tempero Baiano):
  • 1 tsp Cumin Ground
  • 1 tsp Oregano
  • ½ tsp Ground White Pepper
  • ¼ tsp Chillies Crushed
  • Chicken & Beans:
  • 75 g (3 oz) butter
  • 675 g (1½ lb) boneless, skinless chicken thighs, cut into 2.5 cm cubes
  • 1 onion, chopped
  • 1 red pepper, chopped
  • 1 tbsp tomato purée
  • 1 tbsp Bahian Seasoning (Tempero Baiano)
  • 75 g (3 oz) flour
  • 1 litre (1 pint 15fl oz) chicken stock
  • 400 g tin black eyed peas, drained and rinsed
  • 225 g (8 oz) pitted black olives, chopped
  • 4 tsp Coriander Leaf
  • 1 tsp Sea Salt
  • 2 tbsp Romano cheese, grated*
