This delicious combination of three French classics is the ultimate centrepiece - dauphinois, French onion and pithivier.

- 2 tbsp butter
- 3 large onions, finely sliced
- 3 thyme sprigs
- 1 tsp flaked sea salt

- 500ml beef stock
- 2 kilo peeled Maris Piper potatoes
- 200ml double cream
- 1 litre whole milk
- 6 black peppercorns
- 2 rolls all butter puff pastry
- 200g gruyere, cut into chunks
