Ingredients

• 2 capsicums, cut into chunks
• 2 courgette, cut into quarters lengthwise
• 1 eggplant, cut into thick rounds
• 1 fennel, trimmed and quartered
• 1 red onion, cut into wedges
• Olive oil
• 1 large rosemary sprigs
• 1 cup Greek yoghurt
• 1 Tbsp freshly chopped dill, plus extra for garnish
• 50g feta cheese
• 1 lemon
• 4 vine tomatoes, diced
• ¼ red onion, finely diced
• 2 Tbsp capers
