Ingredients

• 3 tablespoons olive oil
• 1 sugar pie pumpkin
• 4 whole carrots, root and stem trimmed
• 1 large yellow onion, chopped
• 1 large or 2 small shallots, chopped
• 2 garlic cloves, minced
• kosher salt, to taste (1/2-1 teaspoon)
• fresh ground black pepper, to taste
• ½ teaspoon ground cinnamon
• ½ teaspoon freshly ground nutmeg
• 4 cups vegetable broth
• 1 teaspoon Sriracha hot chile sauce
• ½ cup full fat coconut milk (or heavy cream)
• 2 tablespoons maple syrup (or honey)
• roasted, salted pepitas to garnish
