- 4 boneless center cut pork chops, 4 to 6 ounces each, at least 1⁄2- inch thick
- 3⁄4 cup apple cider
- 2 teaspoons Dijon mustard
- 1 1⁄2 cups low sodium chicken stock
- 2 teaspoons potato starch, dissolved in 2 tablespoons cold water
- 3 tablespoons crème fraîche
- 2 tablespoons fresh chives, thinly sliced
- 2 tablespoons fresh parsley leaves, finely chopped
- 5 cups baby arugula
- 2 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice, more to taste
