- 2 bone-in pork chops, about 1 inch thick
- 2 teaspoons Dijon mustard
- ¾ cup panko bread crumbs
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon cayenne pepper
- 1 tablespoon rosemary, finely chopped
- 1 tablespoon fresh thyme
- 2 tablespoons olive oil
- 1 tablespoon butter
- 3 medium apples (honeycrisp or fuji, sliced ½ inch wedges)
- 1 small red onion, sliced thinly
- 2 tablespoons brown sugar
- 1 teaspoon cinnamon
- ½ teaspoon salt
- 2 teaspoons apple cider vinegar
- Fresh thyme
