Ingredients

• 1 T. coconut oil
• 1 medium red onion, chopped
• 1 T. ground coriander
• 1 t. cumin
• 1/2 t. fresh ground pepper
• 4 cloves garlic, chopped
• 1/2 c. vegetable stock
• 1 15-oz can of kidney beans
• 1 15-oz can of diced tomatoes
• 1 t. salt
• 1/4 c. cilantro, chopped (optional)
• 1/4 c. mint, chopped (optional)
