Soft Coconut and Jam Cake (Bolo de Coco) Recipe

Ingredients

• Cake:
• 3/4 cup of all-purpose flour
• 1 and 1/4 cups of grated coconut
• 2 eggs
• 1/2 cup of sugar
• A little less then 1/2 cup of milk
• 1/4 cup of sunflower oil
• 2 teaspoons of baking powder
• Lemon zest (to taste)
• Topping:
• 1 tablespoon of jam (to taste)
• 1 tablespoon of lemon liqueur
• 1 tablespoon of grated coconut
