Beef Stew & Rice

Ingredients

• 1 pound lean beef chuck, trimmed
• and cut into 1" cubes
• 2 T. all purpose flour
• 2 T vegetable oil
• 2 lge yellow onions, thinly
• sliced (about 3 cups)
• 2 c. sliced mushrooms
• 2 cloves garlic, minced
• 2 tsp reduced sodium tomato paste
• 2 c. reduced sodium beef broth
• 4 c. sliced carrots
• 2 med russet potatoes, thinly
• sliced (about 2 cups)
• 1 c. 1" green bean pieces
• 1 T. cornstarch
• 1 T cold water
• 1/4 c chopped fresh parsley
