Ingredients
- For The Crust:
- 2 C finely crushed gingersnaps (I used 1 box of Anna’s ginger thins)
- 4 T unsalted butter, melted
- For The Filling:
- 3 packages of organic cream cheese @ room temperature
- 2 packages of 1/3 less fat cream cheese @ room temperature
- 1½ C sugar
- 1 pinch of salt
- 4 eggs @ room temperature
- 1½ C organic sour cream
- ½ C juice of Meyer lemon (I used 2 juicy lemons)
- Zest from 2 Meyer lemon
