Ingredients

• 2 tablespoons olive oil
• 1 small red onion, chopped, or 1/2 cup packaged chopped red onions
• 1 1/2 cups grape tomatoes, halved and seeded
• 8 ounces Soules Kitchen Blackened Chicken Strips
• 3 cups chopped fresh spinach, or chopped frozen spinach, thawed and drained
• 8 large eggs
• 1/4 cup whole milk
• 1/2 teaspoon kosher salt
• 1/4 teaspoon freshly ground black pepper
• 1 cup shredded Swiss cheese
• Fresh parsley, for garnish
