Ingredients

• 3 cups of finely grated carrots
• 11/2 cup of brown sugar (packed)
• 4 eggs
• ½ cup apple sauce
• ¾ cup of vegetable oil (or canola oil)
• 1 ½ tsp vanilla extract
• 3 cups of all-purpose flour
• 2 tsp baking powder
• 1 tsp salt
• 1 ½ Tbsp of Scorpio’s Kiss
• 1 Tbsp of cinnamon
• 1 cup chopped walnuts (optional)
• 1 cup of raisins (optional)
• 500 g of brick-style cream cheese (2-packages /room temperature)
• ½ cup unsalted butter (room temperature)
• 2 cups icing sugar
• 1 tsp vanilla extract
