Yuzu Syrup Cakes

Ingredients

• 125 g soft butter
• 1½ cups castor sugar
• 2 tsp grated yuzu zest, plus extra rind removed with a vegetable peeler
• 2 eggs
• 1 cup self-raising flour
• ½ cup buttermilk
• 1 cup yuzu juice (can use a combination of yuzu and lemon if preferred)
• Greek yoghurt or thick cream, to serve
