• ½ pounds pizza dough, at room temperature
• 1 tbsp honey
• 1 tbsp balsamic vinegar
• 1 small shallots, thinly sliced
• 2 cloves garlic, grated
• 1 tbsp thyme leaves
• 1 pinch crushed red pepper flakes
• 1 pinch kosher salt
• 1 pinch black pepper
• 1½ cups shredded brussels sprouts
• ½ cups grated manchego for parmesan cheese
• 1½ cups shredded Castello® Havarti creamy cheese
• 4 slices thick-cut bacon, chopped
