• 900g round steak tenderised and cut into chunks
• 1 tsp plain flour for coating
• 3 tbsp olive oil
• 1 onion
• 1 large carrot
• 2 stalks of celery
• 2 tbsp sugar
• 1 tsp dried mustard powder
• 1 tbsp tomato puree
• 1 tbsp orange rind
• 600ml guinness
• Salt and pepper, to season
• 1 tbsp bouquet garni
