Ingredients

• 4 (400g) overripe bananas, mashed
• 1 2/3 cups all-purpose flour
• 2 teaspoons baking powder
• 1/2 teaspoon baking soda
• 1/2 teaspoon salt
• 1/2 cup melted butter
• 2 tablespoons sour cream or plain yoghurt
• 2/3 cups brown sugar
• 2 large eggs
• 1/3 cup walnuts
• 2 1/2 tablespoons Goslings Black Seal Rum
• 1 teaspoon vanilla extract
