Ingredients

• 225g/8oz boneless, skinless chicken breasts , cut into thin strips
• 1 free-range egg white
• 2 tsp cornflour
• 1 tsp salt
• ½ tsp freshly ground white pepper
• 225g/8oz fresh thin egg noodles (substitute dried egg noodles if unavailable)
• 350ml/13fl oz groundnut or peanut oil
• 2 tbsp Shaoxing rice wine or dry sherry
• 1½ tbsp oyster sauce
• 1 tbsp light soy sauce
• 300ml/10½fl oz chicken stock
• ½ tsp freshly ground black pepper
• 1 tbsp cornflour , mixed with 1½ tbsp water
• 3 tbsp finely chopped spring onions
