Ingredients

• 1 tbsp butter
• 400 g flat mushrooms, sliced
• 2 garlic cloves, crushed
• 1 tsp smoked paprika
• 1 tsp cumin
• 1 tsp ground coriander
• 4 tortillas
• ½ cup baby spinach leaves
• 1 cup grated mixed pizza cheese
• Hot sauce (optional)
• Serve with sliced avocado, coriander, and jalapeños
