• 1/4 cup (50g) vegetable shortening
• 3/4 cup (170g) cold, unsalted butter, cubed
• 1/2 cup (118ml) ice water
• 1 tablespoon (15ml) apple cider vinegar
• 3/4 cup (170g) canned pure pumpkin purée (Not pie filling)
• 1/3 cup (66g) sugar
• 1 large egg
• 2 tablespoons (30ml) heavy cream
• 1/2 teaspoon ground cinnamon
• 1/4 teaspoon ground ginger
• 1/8 teaspoon ground nutmeg (preferably freshly ground)
• egg wash (1 egg beaten with 1 tablespoon (15ml) of water)
• coarse sugar
